*To make your own gluten free flour blend, combine 1 ¼ cup white rice flour, ¼ cup brown rice flour, ¾ cup potato starch, ¼ cup tapioca flour and 1 teaspoon xanthan gum.
Ingredients
- ½ cup unsalted butter, melted
- 1 cup sugar
- 1 large egg (or 2 egg yolks), lightly beaten
- 6 tablespoons cream cheese
- 1 ½ teaspoon vanilla extract
- 2 ½ cups gluten free flour blend* (add 1 teaspoon xantan gum if your blend doesn’t contain it)
- 1 teaspoon lemon zest (optional)
- 1 ½ teaspoon baking powder
- ½ teaspoon salt
- ½ baking soda
- ¼ cup milk
- ½ cup granulated sugar (for rolling the cookies)
Method
Step 1
Heat oven to 350 ̊ F, line two baking sheets with parchment paper and set aside.
Step 2
In a medium bowl, combine the gluten free flour blend, lemon zest, baking powder, salt, baking soda and set aside.
Step 3
In a large mixing bowl, whisk together the melted butter, sugar, egg, cream cheese, vanilla extract, and milk and add the dry ingredients. Gently mix to form smooth dough.
Step 4
Scoop out about two tablespoons of the dough and form into balls – you should get about 2 dozen.
Step 5
Roll the dough balls into sugar and place on the prepared baking sheets, spacing them well apart. Flatten the cookies and bake (one sheet at a time) until set, but not browned, about 10-12 minutes.
Step 6
Cool the cookies slightly on the sheets (about 5 minutes), before carefully transferring them to a wire rack to cool completely.
