Take your tired old oatmeal up a notch with this baked recipe. The eggs deliver a nice fluffy texture and the extra protein you need for a complete and balanced breakfast.
- 3 cups almond milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 2 cups gluten free oats
- 3 apricots, pitted and sliced
Preheat the oven to 400°F.
Whisk the almond milk, egg, and vanilla together. Pour in the oatmeal and stir to coat evenly.
Add the mixture to a small baking dish. Layer the apricots on top of the oatmeal. Sprinkle with cinnamon if desired.
Bake for 15-20 minutes, stirring the mixture once half way through cooking.
Remove from the oven, let stand 5 minutes and serve.
