This gluten free coffee cake recipe makes an exceptionally moist gluten free cake with a crumbly cinnamon-flavored streusel topping – it’s the perfect accompaniment to an afternoon tea or coffee. The texture is melt-in-the-mouth smooth and buttery.

Tips (see ingredients below):

* Add 1 teaspoon xantan gum if the gluten free flour blend doesn’t contain it.

Ingredients

  • For the cake:
  • ½ cup butter, softened
  • ¼ cup cream cheese, softened
  • ½ cup plain yogurt
  • ½ cup applesauce
  • 2 large eggs, lightly beaten
  • 1 teaspoon lemon zest
  • 2 teaspoon vanilla
  • 2 cups gluten free all-purpose flour*
  • 1 ½ teaspoons baking powder
  • ½ cup light brown sugar
  • ¼ teaspoon sea salt
  • ½ teaspoon baking soda
  • For the streusel topping:
  • ½ cup brown sugar
  • 1 tablespoon raw honey
  • ¼ teaspoon sea salt
  • 2 teaspoons cinnamon
  • 1/3 cup unsalted butter, melted
  • 3/4 cup almond meal

Method

Step 1

Preheat oven to 350 ̊ F. Grease a tube baking pan, sprinkle lightly with gluten free flour and set aside.

Step 2

In a large bowl whisk together butter, cream cheese, yogurt, apple sauce, eggs, lemon zest and vanilla.

Step 3

In another bowl combine gluten free flour, baking powder, sugar and baking soda and add to the wet mixture, stirring to a smooth batter.

Step 4

Combine the topping ingredients in a bowl and stir with a fork.

Step 5

Spread half of the batter into the prepared baking pan. Sprinkle with half of the streusel topping

Step 6

Spread over the rest of the batter and sprinkle with the remaining topping mixture.

Step 7

Bake for about 45-50 minutes or until the cake is nicely brown and a toothpick inserted near the center comes out clean.

Step 8

Remove pan from oven and place on wire rack. Cool the cake completely before cutting and serving.
