Ingredients
- 1 (14.5-ounce) can black beans, drained and rinsed well
- ¼ cup honey
- 1 teaspoon instant espresso coffee powder
- 1/3 cup olive oil
- 1/3 cup unsweetened cocoa powder
- 2 large eggs, lightly beaten
- ¼ cup brown sugar
- ¾ teaspoon baking powder
- 2 teaspoons vanilla
- ½ cup plus 2 tablespoons chopped walnuts, divided
- ½ cup dark chocolate chips
- 2 tablespoons walnuts, chopped
Method
Step 1
Preheat oven to 350°F, grease a square baking pan, line with parchment paper and set aside.
Step 2
Place black beans, honey, espresso powder and olive oil and cocoa powder in a food processor and pulse to a smooth paste.
Step 3
In a mixing bowl, whisk together the eggs, brown sugar, vanilla and baking powder. Stir in the black beans mixture, and then fold in the chocolate chips and ½ cup chopped walnuts.
Step 4
Spread the mixture into the prepared pan, sprinkle with chopped walnuts and bake for about 30-35 minutes or until a toothpick, inserted into the center comes out clean.
Step 5
Cool for about 10 minutes before cutting into 9 squares.
